Paleo Breakfast Recipe - Scrambled Eggs with Vegetables


I don't eat red meat and I am having a hard time finding turkey bacon that doesn't have sugar in it. My eggs have been lonely. I miss having toast, potatoes or veggie sausage with my eggs. Although someone who is trying to lose weight on the Paleo Diet should limit fruit intake, I added a nice, sweet, juicy tangelo to my breakfast this morning! Here is a recipe for something I often eat. Again, I rarely, if ever, open a cookbook so this is my scratch recipe with estimated ingredient portions along with a photo. It looks like a lot of food but this is served on a small bread plate:
1 large farm fresh organic egg
2 tbsp milk
1/2 cup packed spinach, cut into ribbons
2 crimini mushrooms chopped
3 tbsp minced fresh onion
Salt and pepper to taste
1/2 tsp coconut oil
Melt coconut oil in saute pan on medium/high heat. Toss in onions and mushrooms and saute for 3-4 minutes. Whisk eggs, milk, salt and pepper together. Pour egg mixture over onions and mushrooms and then sprinkle spinach over top of eggs. cover for 1 minute and then remove lid and turn/scramble eggs until cooked to your liking. I like my eggs fairly dry but not overcooked. I often take them off the heat when they are almost done and then just cover them for a minute or two so they continue to cook a bit. Very tasty!
