Paleo Scrambled Egg Hash

I have been hungery after eating breakfast since I started this diet so with advise from the Robb Wolf website forum, today I amped up my breakfast and now I feel like I ate a horse!  Here is a recipe for what I ate for breakfast today.



Paleo Scrambled Egg Hash

3 farm fresh eggs
2 crimini mushrooms
3 T minced onion
1 cup packed baby fresh spinach leaves chopped
2 T chopped chives
1 1/2 precooked andouille chicken sausage chopped(Trader Joe's)
1 tsp coconut oil
Dash of tobasco
Fresh ground pepper to taste

Saute onions and mushrooms in coconut oil for 3-5 minutes on medium high.  Add chopped sausage and saute another 2 minutes.  Wisk eggs, chives, pepper and tobasco until blended.  Pour over onion, mushroom and sausage mixture and top with chopped fresh spinach.  Cover, turn heat down to medium and let cook for 3 minutes.  After 3 minutes uncover, turn heat back to medium high and scramble the mixture, cooking until done to your liking.  I like my eggs dry so I cook for several minutes more.  Serve with 1/2 of avocado, sliced.
