Today I received the Primal Blueprint Cookbook and pedometer I had ordered last week. Just in the nick of time! The Primal Blueprint Cookbook recipes have items not allowed on the Paleo Diet so I will just alter them a bit.
I had a very late breakfast so I didn't really have lunch today. I just snacked on a handful of cashews and had an early dinner. Here is my recipe for my meal tonight:
Paleo Shrimp Salad:
Big handful of baby spinach
8 oz bay shrimp
1 cup shredded red cabbage
1/2 avocado chopped
1/4 cup sliced yellow squash
1/8 cup sunflower seeds
Homemade pesto dressing:
2 T of my homemade pesto
3 T red wine vinegar
4 T olive oil
Fresh ground pepper to taste.
This was a filling salad and although it was tasty, I think I will throw some chopped artichoke hearts in it next time. I also had some cauliflower mash and here is that recipe:
Paleo Cauliflower Mash
1 head cauliflower, cut up into small pieces and steamed until very soft and then mashed up.
1 T butter (maybe not Paleo but tasty!)
Salt and pepper to tast
I could eat this daily, it is so good!
I haven't been sleeping well since I began the Paleo diet. Hopefully tonight sleep will come easily and I can start day two with a little pep in my step.
Speaking of pep in my step, I wore the pedometer from noon on today and took a nice little walk in the sunshine. Step count today was 4375. Tomorrow I will shoot for at least 6000.
