I am now on day 11 of this diet but only 3 days into the Official 30 Day Challenge and I am already feeling and seeing the results! I have lost almost 8 lbs and it seems that some of my spare tire is starting to melt away! I have plenty of energy and I am finally learning to eat in such a way that I am rarely hungry any more. When I began this "diet" I was hungry a LOT of the time. I think incorporating more fat into my meal plan has helped considerably!
I had a fairly boring food intake throughout the day so I will spare you the details and get right down to the favorite thing I have eaten today. I made an incredible salad dressing just out of necessity since I hadn't made any for a while. I always make my own dressing. If you have read my other recipes you already know I don't measure but here is the recipe give or take a bit here or there:
1 avocado
juice of 1 large juicy orange or two small oranges
1 tsp fresh parsley (this grows year around in my garden)
1 tsp fresh basil (grows in my window box)
1/2 tsp fresh crushed garlic
1/2 cup walnut oil
1 /4 cup red wine vinegar
Throw it all into a mini food processor or a blender and voila! Nice, thick, rich dressing! I served it over baby greens and tossed a handful of shrimp on it.
